Beet Hummus

Last week, I made these amazing beet burgers. Beets are lovely, aren’t they? I think beets are the most beautiful color in the whole world. But…I have to admit that I really hate to eat them plain. I’ve tried them in salads with goat cheese and soaked in butter and horseradish sauce. But my favorite beets are definitely those diced small and mixed well with other flavors.

As I was contemplating what to do with the lonely, leftover beet in my crisper, I suddenly remembered a batch of beet hummus Dave’s aunt had made at Christmas, and I immediately got excited.

This hummus is a little earthy and a little tangy, and full of gorgeous pink. Eat it with a huge handful of bright, raw vegetables and you will feel like you are on cloud nine.

Lentil and Chickpea Salad with Feta and Tahini

Sarah and I are really trying to be health conscious. We are resisting the lure of…well, lots of things. We are embracing lentils! We are eating things raw! We are taking walks with a toddler who loves to watch birds and teenagers playing basketball—and anything else that starts with the letter b.

I mean, really, we are willing to do anything as long as there is some kind of cheese involved somewhere.

But even so, I admit I was a little skeptical about a salad made of both lentils and chickpeas. (Isn’t that a lot of protein? Where is the greenery? Where are the grainy carbs?)

Don’t be fooled. This salad is delicious (and, P.S., the leftovers were even better than the first serving)! You will be glad you tried it.

Besides, lettuce isn’t even in season yet. So it’s still totally fair to make salads mainly from dry goods, right? Right.

Carrot Soup with Tahini

This month for the Secret Recipe Club challenge, I was assigned the blog Searching for Spice. I knew immediately that I wanted to try out this carrot soup. I mean, what is better than a vegetable soup for lunch on a winter day?

My good friend Sarah over at Well Dined came over to make this soup with me. Outside, the ground was glittering with fresh snow, and inside, our bellies were warmed by several bowls full of this delicious soup, sweet and a little bitter with just a hint of heat.
